The new Stokely Family Residence Hall at University of Tennessee, Knoxville, features a Fresh Food Company large-scale dining facility, a POD grocery, and a coffeehouse.
The dining facility, with amenities open to students and the public, seats about 750 diners. This facility differs from others on campus because food is prepared directly in front of patrons, who can design their own meals.
Meal stations are spread out to ensure lines are never too long and to avoid congestion during peak meal times. Nutritional information is displayed above stations for diners. Each of the food stations in the facility is distinguished by different colors to signify the variety of fresh-to-order menu options, which range from meatless meals to international cuisine.
Indoor seating options include seated tables and booths. Glass partitions enhance the facility’s sustainable design; large windows admit ample natural light.
In addition to the 750 seats inside the dining facility, a large outdoor courtyard features dining areas and acts as one of the welcoming entrances to the building.
