The 85,000-square-foot Niagara Falls Culinary Institute transforms a vacant building into a state-of-the-art NCCC learning annex with six culinary teaching labs and hospitality spaces, fine-dining restaurant, pastry and deli locations open to the public, and a professionally-instructed public cooking class space.
The interior’s aesthetic design reflects Niagara Falls – warm color tones and nature-based patterns complement natural qualities of the local region.
The development faced many interesting challenges, but probably the most significant was working with the existing structure of a former parking garage converted into a shopping mall and food court that had stood vacant for nearly 20 years.
Solutions:
• The existing floor slabs had multiple elevation changes. An extensive accessibility plan designed new ramps and stairs to unify levels. Building space planning was carefully executed to work around elevation changes.
• Detailed engineering studies were completed with the food service equipment consultant to ensure proper gas/power/water supplies.
• Dramatically changing structural loading issues required the removal and replacement of existing concrete floor decks.
• The culinary program involves extensive HVAC, plumbing and electrical requirements. Great care and detail were required to coordinate these services with the laboratory planning layouts.
