The challenge was to renovate this 45-year-old student union into a desirable dining destination. The existing facility was losing sales to off-campus vendors. The project entailed the renovation of the servery to include Asian, soup/salad/sandwich, Southwestern, pizza and juice bar food platforms. A sense of energy and movement was created with exhibition-style food preparation, vibrant colors and unique architectural treatment for each food platform. The food platforms and carefully sculpted soffits flow around the perimeter of the kitchen. New openings to the hallway increased visibility and access.
Placement of the juice bar serves to channel patrons from the common servery into point-of-sales registers prior to accessing the dining room. The dining room was decreased in capacity, and seating was concentrated closer to the floor-to-ceiling windows around the perimeter of the room.
The faculty lounge at the lower level was remodeled into an overflow dining room and meeting room for catered events.
Gross sales of the Crossroads Dining Facility have increased 50 percent since the renovation.
